Stracciatella Italian Cheese-egg Soup
Ingredients
- 2 Eggs, beaten
- 2 Tablespoons Breadcrumbs
- 1/2 Teaspoon Nutmeg
- Parsley, to garnish
- 3 Tablespoons Parmesan Cheese, grated
- 1/2 Teaspoon Salt
- 5 1/2 Cups Chicken Broth, heated
Instructions
Mix the eggs, breadcrumbs, Parmesan cheese, salt and nutmeg well. Add the mixture to 1/2 cup chicken broth and mix to a smooth texture. Add the mixture to the rest of the chicken broth. Garnish with parsley.
