Italian Tortellini Soup

Ingredients

  • 56 and 1/2 Ounces Beef Stock or Broth
  • 1 Pound Sweet Italian Sausage, cut into 1/2" pieces
  • 1 Nine Ounce Box of Cheese or Meat Tortellini
  • 1 Nine Ounce Box of Spinach Tortellini
  • 1 Small Red Onion, chopped
  • 1 Tablespoon Fresh Basil, chopped
  • Pepper, to taste
  • 7 Cups Water
  • 1/2 Pound Cabbage, shredded
  • 1 Medium Zucchini, sliced
  • 1 Small Green Pepper, diced
  • 1 Medium Tomato, diced
  • Salt, to taste
  • Parmesan Cheese, grated

Instructions

Combine all ingredients in a large pot. Bring to a slow boil over medium heat and simmer until vegetables are tender, about 15 minutes. Serve with freshly grated Parmesan cheese.
