Basic Rice Salad

Ingredients

  • 2 Cups Cooked Rice
  • 1 Tablespoon Fresh Mint, chopped
  • 2 Tablespoons Green Pepper, chopped
  • 3 Tablespoons Fresh Lemon Juice
  • 3 Tablespoons Olive Oil
  • 1/4 Cup Fresh Parsley, Finely chopped
  • 1/4 Cup Yellow Onion, chopped
  • 1 Medium Tomato, peeled, seeded, and chopped
  • 1 Teaspoon Salt
  • Freshly Ground Black Pepper, to taste

Instructions

Mix all ingredients in a medium size bowl. Chill several hours or overnight to meld flavors. Stir well before serving.
